Marinated Carrots

  • 2 lb. carrots, cut up 1-inch
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. prepared mustard
  • 1/2 c. salad oil
  • 3/4 c. sugar
  • 3/4 c. cider vinegar
  • 1 can tomato soup
  • 1 large onion, chopped
  • 1 large green pepper, chopped

Directions

    Bring carrots to a boil.

    Boil 5 minutes.

    Drain; cool.

    Add salt, pepper and mustard.

    Beat in a little oil to blend with mustard.

    Add remaining oil, sugar, vinegar and soup.

    Beat again to blend.

    Stir in the pepper and onion.

    Cover tightly and chill overnight.

    Makes 12 to 16 servings.
