- 2 lb. carrots, cut up 1-inch
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. prepared mustard
- 1/2 c. salad oil
- 3/4 c. sugar
- 3/4 c. cider vinegar
- 1 can tomato soup
- 1 large onion, chopped
- 1 large green pepper, chopped
Directions

1Bring carrots to a boil.

2Boil 5 minutes.

3Drain; cool.

4Add salt, pepper and mustard.

5Beat in a little oil to blend with mustard.

6Add remaining oil, sugar, vinegar and soup.

7Beat again to blend.

8Stir in the pepper and onion.

9Cover tightly and chill overnight.

10Makes 12 to 16 servings.
