- 1/2 lb baby carrots, sliced in half, horizontally
- 1 -2 garlic clove, crushed
- 1/4 teaspoon dried oregano
- kosher salt
- freshly cracked black pepper
- 2 tablespoons red wine vinegar
- olive oil
Directions

1Parboil the carrots until just tender, about 5 minutes.

2Drain well and place in a deep serving dish.

3Mix the garlic, oregano, salt and pepper and red wine and pour over the carrots.

4Then pour the olive oil over the carrots to cover.

5Wrap with plastic and chill for 2-3 hours before serving.
