Marinated Carrots

Ingredients

  • 2 lb. carrots, peeled, sliced and cooked until barely tender, drain
  • 3 small onions, sliced fine and diced
  • 1 green pepper, sliced fine and diced
  • 1 can undiluted tomato soup
  • 3/4 c. sugar
  • 1/4 c. cooking oil
  • 1/4 c. vinegar
  • 1/4 c. prepared mustard
  • 1 tsp. salt and pepper to taste

Directions

    Mix all ingredients and pour over hot carrots.

    Cool. Refrigerate and stir occasionally.

    Will keep well 2 to 3 weeks in refrigerator.
