  • 1/2 cups Good Quality Olive Oil
  • 1/2 cups White Wine Or Champagne Vinegar
  • 3 Tablespoons Chopped Fresh Parsley
  • 3 Tablespoons Green Onion, Fine Chop
  • 1 teaspoon Sugar
  • 1/4 teaspoons Dried Basil
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper
  • 3 cloves Garlic, Fine Mince
  • 1 jar Diced Pimentos, Drained OR Roasted Red Peppers, 4 Ounce Jar
  • 1 teaspoon Red Pepper Flakes (optional)
  • 1 pound Variety Of Cheeses, Cubed (Cheddar, Muenster, Cream Cheese And Swiss)
  • 1 loaf Crusty Bread, French Or Ciabatta Works Well

Directions

    Cut cheese into desired sizes.

    Place the first 11 ingredients (oil through red pepper flakes) into a shaker to combine.

    Pour the liquid over the cheeses, cover tightly and refrigerate at least 8 hours, but best if at least overnight.

    Arrange on serving tray with all the liquids.

    Serve with cubed bread to soak up the marinade.
