  • 3 lb. new potatoes (marble size is best)
  • 1/4 c. garlic wine vinegar
  • 1 1/2 tsp. salt
  • 1 Tbsp. pepper
  • 3 Tbsp. consomme
  • 1/3 c. saki or white wine
  • 1 Tbsp. tarragon
  • 1 1/2 Tbsp. chopped parsley
  • 3/4 c. olive oil

Directions

    Boil potatoes until tender.

    Drain and slice, if necessary. Combine other ingredients and whisk well.

    Pour over warm potatoes and toss gently.
