  • 1 pound fresh or frozen haddock fillets
  • 3 Tbsp cooking oil
  • 3 Tbsp soy sauce
  • 2 green onions (scallions) finely chopped
  • 2 cloves fresh garlic, minced
  • 1 Tbsp brown sugar
  • 1 tsp dried mustard
  • 1/8 tsp black pepper
  • 1 large green bell pepper
  • 6 whole mushroom caps
  • 12 cherry tomatoes

    Thaw fish if frozen.

    Cut fish into 1-inch pieces.

    To make marinade:

    combine oil, soy sauce, scallions, garlic, brown sugar, dried mustard and black pepper.

    Place fish pieces in marinade. Cover and let stand at room temperature for 1 hour.
