Ingredients

  • 1 head cauliflower
  • 1 bunch broccoli
  • 1 large red onion
  • 1 red bell pepper
  • 3 carrots
  • 2 c. button mushrooms
  • 1 small jicama
  • 1/2 c. oil
  • 1 1/2 c. rice vinegar
  • 1/3 c. sugar
  • 1 Tbsp. salt
  • 3/4 tsp. oregano
  • 1 tsp. pepper
  • 2 tsp. garlic juice

Directions

    Cut all vegetables into bite-size pieces (leave mushrooms whole, choose small ones).

    Blend remaining ingredients for marinade in a large container with cover.

    Add vegetables and refrigerate overnight, stirring gently occasionally.
