- 1 head cauliflower
- 1 bunch broccoli
- 1 large red onion
- 1 red bell pepper
- 3 carrots
- 2 c. button mushrooms
- 1 small jicama
- 1/2 c. oil
- 1 1/2 c. rice vinegar
- 1/3 c. sugar
- 1 Tbsp. salt
- 3/4 tsp. oregano
- 1 tsp. pepper
- 2 tsp. garlic juice
Directions

1Cut all vegetables into bite-size pieces (leave mushrooms whole, choose small ones).

2Blend remaining ingredients for marinade in a large container with cover.

3Add vegetables and refrigerate overnight, stirring gently occasionally.
