  • 5 lb. small to medium fresh mushrooms
  • 3 medium red onions, halved
  • 1 large clove garlic, chopped fine
  • 3 oregano leaves, chopped fine
  • 2 Tbsp. salt
  • 1 tsp. pepper
  • 1 pt. olive oil
  • 1/2 pt. red wine vinegar

Directions

    In a large jar, mix garlic, oregano, salt, pepper, olive oil and red wine vinegar.

    Shake well to blend.

    Place mushrooms and onions in a large bowl.

    Pour marinade mixture over mushrooms and onions. Stir to coat. Cover bowl and marinate in refrigerator for at least 3 days, stirring occasionally.
