- 3/4 c. olive oil
- 1/3 c. wine vinegar
- 1 clove garlic, halved
- 1 bay leaf
- 3/4 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. dried whole basil
- 6 peppercorns
- 1 1/2 lb. medium mushrooms, halved
Directions

1Combine all ingredients, except mushrooms, in a skillet. Bring to a boil, reduce heat and simmer for ten minutes.

2Stir in mushrooms and simmer for five minutes.

3Let cool.

4Cover and chill several hours.

5Drain before serving, removing garlic and bay leaf.
