Marinated Mushrooms

Ingredients

  • 1/3 c. red wine vinegar
  • 1/3 c. salad oil
  • 1 red onion, sliced thin
  • 1 tsp. salt
  • 2 tsp. dried parsley flakes
  • 1 Tbsp. brown sugar
  • 1 tsp. prepared mustard
  • 3 c. fresh mushrooms (skins removed, steamed 1 minute and drained)

Directions

    Simmer all ingredients, except mushrooms for 5 minutes.

    Drain mushrooms and add to marinade.

    Store in refrigerator at least 24 hours and as long as 2 weeks.

    Remove from refrigerator at least one hour before serving.

    Serve in bowl with toothpicks.
