Marinated Mushrooms

Ingredients

  • 1 lb. small mushrooms
  • 1/2 c. vinegar
  • 1/3 c. water
  • 1 1/2 Tbsp. canola oil
  • 3/4 tsp. fructose (1 tsp. sugar)
  • 1 Tbsp. finely chopped onion
  • 1 Tbsp. finely chopped parsley
  • 1/2 tsp. dried basil
  • 2 garlic cloves, finely chopped
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper

    Clean the mushrooms, cutting off the stems and leaving them whole.

    Set aside.

    Place all other ingredients in a large saucepan and bring to a boil again.

    Reduce the heat and simmer, uncovered, for 5 to 10 minutes or until mushrooms are tender. Refrigerate several hours before serving.
