  • 3 lb. fresh mushrooms
  • 1/3 c. red wine vinegar
  • 1/3 c. salad oil
  • 1 small onion, sliced in rings
  • 1 tsp. salt
  • 1 tsp. prepared mustard
  • 1 tsp. brown sugar
  • 1 1/3 c. red wine vinegar
  • 1 1/3 c. salad oil
  • 3 small onions, sliced in rings
  • 3 tsp. dried parsley
  • 3 tsp. prepared mustard
  • 3 tsp. brown sugar

Directions

    Place mushrooms, vinegar, oil, onion, seasonings and sugar in large pot.

    Boil for 3 minutes; drain in colander.

    Combine red wine, vinegar, salad oil, onions, salt, parsley, mustard and brown sugar and pour over mushrooms in a large bowl.

    Marinate at room temperature until cool.

    Place, covered, in refrigerator for at least 24 hours.

    Will keep as long as mushrooms last.
