Ingredients

  • 1 lb. small fresh mushrooms
  • 1 c. water
  • 2 tsp. salt
  • 1/2 c. distilled white vinegar
  • 1 bay leaf
  • few thyme sprigs
  • 1 garlic clove
  • 2 Tbsp. olive oil
  • sliced green onion or mild red onion (if desired)
  • finely chopped parsley
  • peel of 1 lemon, cut into thin strips

Directions

    Trim mushroom stems.

    Wipe mushrooms with a cloth dipped in cold acidulated water (1 1/2 teaspoons lemon juice or distilled white vinegar to 2 cups water).
