Marinated Pea Salad

Ingredients

  • 3/4 c. white vinegar
  • 3/4 c. sugar
  • 1 Tbsp. water
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 (17 oz.) can LeSueur peas, drained
  • 1 (11 oz.) can Green Giant white Shoe Peg corn, drained
  • 1 (16 oz.) can French-style green beans, drained
  • 1 (2 oz.) jar diced pimento, drained
  • 1 c. finely chopped celery
  • 1 c. finely chopped onion

Directions

    Combine in small saucepan the vinegar, sugar, water, salt and pepper.

    Bring to a boil, stir and cook 1 minute.

    Remove from heat.

    Cool completely.

    Combine vegetables in a large bowl. Pour marinade over vegetables, stir gently.

    Cover salad and refrigerate.

    Salad keeps well in refrigerator about a week.
