Marinated Shrimp

Ingredients

  • 2 lb. shrimp, cooked and peeled
  • 2 medium onions, sliced
  • 2 small green peppers, sliced
  • 4 carrots, sliced and cooked
  • 10 3/4 oz. can tomato soup
  • 1/2 c. vinegar
  • 1/2 c. salad oil
  • 3/4 c. sugar
  • 1 Tbsp. prepared mustard
  • 2 cucumbers, sliced

Directions

    Combine shrimp, carrots, onions and peppers; set aside.

    Mix well soup, vinegar, salad oil, sugar and mustard.

    Pour over shrimp and vegetables.

    Mix lightly.

    Refrigerate overnight. Before serving, add cucumber slices.

    (You can also add orange or apple slices, dew melon cubes, etc.).
