Marinated Vegetable Toss

- 1 pt. fresh sliced mushrooms
- 2 large tomatoes, chopped
- 1/2 c. sliced green onions
- 1/2 c. salad oil
- 1/2 c. dry white wine
- 2 Tbsp. vinegar
- 2 tsp. sugar
- 1 tsp. crushed dried basil
- 8 oz. fresh torn spinach
Directions

1In a bowl, combine mushrooms, tomatoes and green onions.

2In a screw-top jar, combine oil, wine, vinegar, sugar, basil and 1/2 teaspoon salt.

3Cover; shake well.

4Pour over and toss with vegetables.

5In a large bowl, toss vegetable mixture with spinach. Serve with grated, hard-cooked egg yolks over salad.

6Serves 4 to 6.
