Ingredients

  • 1 large onion
  • 1 small cauliflower (flowerets)
  • 1 can whole mushrooms
  • 2 green peppers
  • 18 black olives
  • carrots, cooked until tender-crisp
  • 1 c. olive oil
  • 1 1/2 c. red wine vinegar
  • 2 tsp. salt
  • 4 Tbsp. sugar
  • 3/4 tsp. black pepper
  • 1 clove garlic

Directions

    Toss together the first 6 ingredients. Bring the olive oil, vinegar, salt, sugar, black pepper and garlic to a boil. Cool 5 minutes.

    Mix vegetables and cooled sauce.

    Cover and refrigerate at least 24 hours to marinate.

    Better after 2 days.

    Bring to room temperature before serving.
