Ingredients

  • 1 head cauliflower, cut into flowerets
  • 1 bunch broccoli, cut into flowerets
  • 2 medium zucchini, sliced
  • 2 bell peppers, cut julienne (red or green)
  • 1 lb. fresh mushrooms, cleaned, stems removed and cut in half
  • 6 oz. pitted black olives
  • 1 c. distilled white or wine vinegar
  • 1 c. vegetable oil
  • 1/2 c. fresh (not bottled) lemon juice
  • 2 tsp. granulated sugar
  • 3 cloves garlic, minced
  • 1 tsp. salt
  • 1 tsp. pepper

Directions

    Prepare all veggies; place in large bowl with seal (like Tupperware or Rubbermaid).

    Combine vinegar, vegetable oil, lemon juice, garlic, sugar, salt and pepper into shaker container. Shake vigorously.

    Pour marinade over vegetables.

    Cover and marinate in refrigerator overnight, stirring occasionally.
