- 1 head cauliflower
- 1 bunch broccoli
- 2 bell peppers
- 1 lb. mushrooms
- 1 (6 oz.) can black pitted olives
- 1 c. distilled vinegar
- 1 c. vegetable oil
- 1/2 c. lemon juice
- 1 garlic clove, minced
- 2 tsp. granulated sugar
- 1 tsp. salt
- 1 tsp. pepper
Directions

1Combine vegetables and olives in large bowl.

2For marinade, combine vinegar and remaining in jar.

3Shake vigorously.

4Pour marinade over vegetables.

5Cover and marinate overnight, stirring occasionally.

6Makes 13 cups.
