Marinated Veggie Salad

Ingredients

  • 23 cup frozen french-style green beans, thawed
  • 12 cup frozen petite peas, thawed
  • 13 cup chopped celery
  • 14 cup chopped green pepper
  • 14 cup chopped red onion
  • 1 (2 ounce) jardiced pimientos, drained (I used roasted red peppers)
  • 2 tablespoons sugar
  • 1 tablespoon canola oil
  • 1 tablespoon cider vinegar
  • 1 teaspoon water
  • 1 small garlic, cloved minced
  • herbs, that you like (I love basil and oregano so I generally add a few)

Directions

    In a salad bowl, combine the beans, peas, celery, green pepper, onions and roasted red peppers.

    In a small bowl, combine the dressing ingredients.

    Pour over vegetables.

    Cover and refrigerate for at least 2 hours.

    Serve with a slotted spoon.
