  • 4 c. cauliflower
  • 4 c. broccoli
  • 2 medium zucchini
  • 2 bell peppers (red ones make it pretty)
  • 1 lb. mushrooms
  • 1 can pitted olives
  • 1/4 c. finely minced onion
  • 1/2 c. wine vinegar and 1/2 c. rice vinegar (or may use 1 c. vinegar)
  • 1 c. oil
  • 1/2 c. lemon juice
  • 3 gloves garlic, minced
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 1 tsp. pepper

    Cut up vegies into bite size pieces.

    Mix up dressing and pour over the vegetables.

    Marinate the vegies overnight, stirring often.
