Marinated Whole Carrots

- 1 lb. miniature carrots, peeled
- boiling water
- 2 bay leaves
- 1/2 c. white vinegar
- 1/4 c. water
- 3 Tbsp. sugar
- 1/2 tsp. each salt, mustard seed and dill weed
- 1/4 tsp. each crushed red pepper and dill seed
- 1 clove garlic, minced or pressed
Directions

1Arrange whole carrots in vegetable steamer and steam over boiling water for 10 to 12 minutes (or until just tender when pierced).

2Or cook carrots in microwave for 6 to 8 minutes in covered dish.

3Plunge into cold water to cool quickly, then drain. Pack in a clean jar.

4Tuck in bay leaves.

5Stir in a cup all other ingredients until sugar is dissolved.

6Pour over carrots.

7Cover and refrigerate for at least 2 days or up to 2 to 3 weeks.
