Marinated Whole Carrots

Ingredients

  • 1 lb. miniature carrots, peeled
  • boiling water
  • 2 bay leaves
  • 1/2 c. white vinegar
  • 1/4 c. water
  • 3 Tbsp. sugar
  • 1/2 tsp. each salt, mustard seed and dill weed
  • 1/4 tsp. each crushed red pepper and dill seed
  • 1 clove garlic, minced or pressed

Directions

    Arrange whole carrots in vegetable steamer and steam over boiling water for 10 to 12 minutes (or until just tender when pierced).

    Or cook carrots in microwave for 6 to 8 minutes in covered dish.

    Plunge into cold water to cool quickly, then drain. Pack in a clean jar.

    Tuck in bay leaves.

    Stir in a cup all other ingredients until sugar is dissolved.

    Pour over carrots.

    Cover and refrigerate for at least 2 days or up to 2 to 3 weeks.
