Ingredients
- 1 large zucchini squash or several smaller ones
- salt
- 6 Tbsp. olive oil
- 1 Tbsp. water
- 2 cloves garlic, mashed
- 2 Tbsp. vinegar (I use more)
- 1 tsp. crushed basil
- 1/2 tsp. salt (if desired)
- 1/8 tsp. pepper
- 1 Tbsp. minced parsley
Directions

1Cut unpeeled zucchini into 1/2-inch thick slices.

2Spread slices on paper towels and sprinkle both sides lightly with salt. Let stand 30 minutes.

3Rinse with water and dry.

4Dice zucchini slices into quarters.

5Heat oil in heavy frying pan.

6Add squash and coat well with oil.

7Add water and garlic.

8Cover pan; reduce heat and simmer until just tender.

9Should still be crunchy.
