Marinated Zucchini

Ingredients

  • 1 large zucchini squash or several smaller ones
  • salt
  • 6 Tbsp. olive oil
  • 1 Tbsp. water
  • 2 cloves garlic, mashed
  • 2 Tbsp. vinegar (I use more)
  • 1 tsp. crushed basil
  • 1/2 tsp. salt (if desired)
  • 1/8 tsp. pepper
  • 1 Tbsp. minced parsley

Directions

    Cut unpeeled zucchini into 1/2-inch thick slices.

    Spread slices on paper towels and sprinkle both sides lightly with salt. Let stand 30 minutes.

    Rinse with water and dry.

    Dice zucchini slices into quarters.

    Heat oil in heavy frying pan.

    Add squash and coat well with oil.

    Add water and garlic.

    Cover pan; reduce heat and simmer until just tender.

    Should still be crunchy.
