Marinated Zucchini And Onion

Ingredients
- 1/4 c. olive oil
- 1 sweet onion, sliced thin
- 1 clove garlic, minced
- 4 small zucchini, trimmed and cut in half lengthwise
- 1 Tbsp. diced, sun-dried tomatoes, marinated in oil
- 1 Tbsp. oil from the jar of sun-dried tomatoes
- 2 tsp. wine vinegar
- 1/2 tsp. salt
- freshly ground pepper
Directions

1Heat olive oil in a large skillet and saute onion and garlic, tossing occasionally, about 5 minutes.

2Add zucchini, cut sides down, in a single layer, over the onion and garlic.

3Cover and reduce heat to low; cook until zucchini is tender, about 30 minutes.

4Add tomatoes, tomato oil, wine vinegar and salt.

5Pepper to taste.

6Toss to combine and remove to a bowl.

7Serve.
