Marinated Zucchini And Onion

Ingredients

  • 1/4 c. olive oil
  • 1 sweet onion, sliced thin
  • 1 clove garlic, minced
  • 4 small zucchini, trimmed and cut in half lengthwise
  • 1 Tbsp. diced, sun-dried tomatoes, marinated in oil
  • 1 Tbsp. oil from the jar of sun-dried tomatoes
  • 2 tsp. wine vinegar
  • 1/2 tsp. salt
  • freshly ground pepper

Directions

    Heat olive oil in a large skillet and saute onion and garlic, tossing occasionally, about 5 minutes.

    Add zucchini, cut sides down, in a single layer, over the onion and garlic.

    Cover and reduce heat to low; cook until zucchini is tender, about 30 minutes.

    Add tomatoes, tomato oil, wine vinegar and salt.

    Pepper to taste.

    Toss to combine and remove to a bowl.

    Serve.
