- 3 envelopes unflavored gelatin
- 1/4 c. cold water
- 3/4 c. boiling water
- 3 Tbsp. granulated fructose
- 1 tsp. white vanilla extract
- 3 egg whites
Directions

1Sprinkle gelatin over cold water in a mixing bowl; set aside for 5 minutes to allow gelatin to soften.

2Add to boiling water in a saucepan; cook and stir until gelatin is dissolved.

3Remove from heat.

4Cool to consistency of thick syrup.

5Stir in fructose and vanilla.

6Beat egg whites into soft peaks.

7Very slowly trickle a small stream of gelatin mixture into egg whites, beating until all gelatin mixture is blended.

8Continue beating until light and fluffy.

9Pour into prepared pan.
