- 2 (3/4 ounce) envelopes unflavored gelatin
- 1 14 cups water, divided
- 2 cups white sugar
- confectioners' sugar
- vanilla (optional)
Directions

1In small bowl, stir together gelatin and 1/2 cup plus 2 tablespoons water.

2Set aside to set up.

3Combine sugar and remaining 1/2 cup plus 2 tablespoons water in a medium saucepan over low heat to make a syrup.

4Stir until sugar is dissolved and let cool.

5With mixer on low speed, slowly and carefully pour syrup into the softened gelatin.

6Increase speed to high; beat until mixture is very thick and white and has almost tripled in volume, about 15 minutes.

7Add vanilla if desired; beat to incorporate.

8Pour into a lightly greased 9x13 inch baking dish and let set overnight.

9Cut into squares, dust with confectioners sugar and serve.
