- 4 ounces mustard seeds
- 1 ounce olive oil
- 1 tablespoon shallots minced
- 1 tablespoon garlic minced
- .5 cup dijon mustard
- .5 cup whole-grain mustard
- 2 ounces lemon juice
- 1 pinch salt and black pepper
Directions

1Roast the mustard seeds lightly in a pan on the stove.

2Remove seeds and set aside.

3Add olive oil to pan and saute the shallots and garlic.

4Do not brown.

5When the aroma of the garlic is released, add the beer.

6Bring to a boil and simmer 1 minute.

7Remove and cool.

8Combine all other ingredients.

9Stir into the beer mixture with the mustard seeds and serve.
