Ingredients

  • 3 cups rice, boiled
  • 2 medium tomatoes, finely chopped
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon chili powder
  • 2 tablespoons oil
  • masala omlette
  • 3 eggs, beaten
  • 2 green chilies, finely chopped
  • 3 tablespoons mint leaves, and
  • coriander leaves, finely chopped
  • 1 large onion, finely chopped
  • 2 tablespoons oil
  • salt

Directions

    Mix all the ingredients of omlette except oil and beat well. Heat oil in a pan, pour in the egg mixture and make an omlette. Fry both sides of omlette. Roll up the omlette and cut into small pieces.

    Heat oil in a large saucepan. Add tomatoes and fry on medium heat till tomatoes are cooked. Add masala omlette, salt, chilli powder and turmeric powder. Mix well. Add boiled rice.

    Stir and cover the pan and leave on low heat for 3 - 5 minutes.
