  • 1 c. butter or margarine
  • 2 c. sugar
  • 2 eggs
  • 1 c. cold, mashed potatoes
  • 1 tsp. vanilla
  • 2 c. flour
  • 1/4 c. cocoa
  • 1 tsp. baking soda
  • 1 c. milk
  • 1 c. chopped nuts

Directions

    Cream softened butter and sugar until fluffy.

    Add eggs, one at a time, beating after each addition.

    Blend in potatoes and vanilla.

    Combine flour, cocoa and baking soda; add alternately with milk.

    Stir in nuts.

    Pour into a 9 x 13-inch baking pan. Bake at 350° for 40 to 45 minutes or until it tests done.
