- 8 to 10 medium potatoes
- salt and pepper to taste
- 1 (8 oz.) pkg. cream cheese
- 2 eggs, beaten lightly
- 2 Tbsp. all-purpose flour
- 2 Tbsp. minced fresh parsley (optional)
- 2 Tbsp. minced chives or 1 small onion, grated (optional)
Directions

1Peel and boil potatoes until tender; drain and put in a large bowl of electric mixer.

2Beat until smooth.

3Add salt and pepper, then cream cheese and beat again.

4Blend in eggs, flour, parsley and chives.

5Beat thoroughly.

6Turn into buttered casserole.

7Bake at 325° for about 30 minutes, until puffy.
