Mashed Potato Casserole

- 8 to 10 potatoes
- salt and pepper to taste
- 1 (8 oz.) pkg. cream cheese, softened
- 2 eggs, beaten lightly
- 2 Tbsp. flour
- 2 Tbsp. parsley
- 1 small onion, grated
- 1 (3 1/2 oz.) can French fried onions
Directions

1Boil the potatoes. Drain and mash with mixer. Season to taste. Add cream cheese and beat thoroughly.

2Blend in eggs, parsley and onion; beat until fluffy.

3Place in buttered casserole. Bake, uncovered, at 325° for 25 minutes.

4Place French fried onions on top and bake 5 minutes more.

5May be prepared in advance and refrigerated.
