Mashed Potato Fried Cakes

  • 1 1/4 c. hot mashed potatoes
  • 1 c. sugar
  • 1 Tbsp. butter
  • 1 tsp. nutmeg
  • 1 tsp. salt
  • 2 eggs, beaten in a cup and filled with milk
  • 4 c. flour
  • 3 tsp. baking powder

    Cream potatoes, sugar and butter.

    Add eggs and milk.

    Sift dry ingredients together.

    Mix with former ingredients slowly. Roll to about 3/8-inch thick.

    Cut with fried cake cutter.

    Fry in hot grease at 360° for about one minute on each side.
