- 1 egg white
- 3 Tbsp. flour
- parsley, if desired
Directions

1To 1 cup of mashed potatoes, add 1 egg yolk and 3 tablespoons flour.

2Beat egg white until stiff and fold in.

3Add parsley, if desired.

4Drop by tablespoons into hot oil until well browned. Makes many small puffy balls.
