Ingredients

  • 9 ounces, fluid Package Frozen, Chopped Spinach, Thawed
  • 1- 1/2 Tablespoon Olive Oil
  • 2 whole Garlic Cloves, Minced
  • 1/4 cups Minced Red Onion
  • 1/2 teaspoons Mustard Seeds (or 1/4 Teaspoon Ground Mustard)
  • 12 cubes Paneer
  • 2 pinches Ground Cayenne Pepper (or More, If You Can Handle The Heat)
  • 1 pinch Ground Nutmeg
  • 1/2 teaspoons Kosher Salt
  • Black Pepper To Taste
  • 1/2 cups Water

Directions

    Start by squeezing out water from spinach.

    Set aside.

    In a medium non-stick saute pan, heat oil over medium heat until it shimmers.

    Add garlic and mix for a second or two.
  5. 5
    Add onion and mustard and saute for a minute or two.

    Dont let the garlic burn.

    Add paneer cubes, cayenne, nutmeg, kosher salt, and a little black pepper, frying for a few minutes to get a little color on the cheese.

    Add the spinach and water and bring to a boil.

    Cover the pan and cook over low heat for 15-20 minutes, stirring occasionally.

    I like mine with cumin-scented rice.
