Mashed "Potato" Parsnips

  • 2 pounds of medium parsnips - peeled and sliced 1/2 inch thick.
  • 1 T of unsalted butter
  • Salt and pepper to taste

Directions

    1) Place parsnips in large pan covered by 1 inch of H2O and bring to a boil over high heat - add a pinch of salt.

    2)Reduce the heat to med-high and simmer until tender -25 to 30 minutes. Add more water, if needed, to keep parsnips covered.

    3) drain and reserve cooking liquid.

    4) return cooking liquid to pan and bring to a boil over high heat and boil until reduced to 3/4 Cup.

    5) return parsnips to the pan and add the butter. Working in batches, add parsnips to a food processor and puree until smooth. Return parsnips to pan and add salt and pepper. Keep warm and serve
