Mashed Potato Rolls

Ingredients
- 1 pkg. yeast
- 1/2 c. warm water
- 1 c. scalded milk
- 2/3 c. shortening
- 1/2 c. sugar
- 1 c. mashed potatoes
- 1 tsp. salt
- 5 c. flour (1/2 plain and 1/2 rising)
- 2 eggs, beaten
Directions

1Dissolve yeast in warm water.

2Scald milk and add shortening, sugar, potatoes, eggs and salt.

3When mixture has cooled to lukewarm, add dissolved yeast and mix well.

4Add flour to make dough stiff.

5Knead thoroughly until smooth.

6Put in a large greased bowl.

7Refrigerate until wanted.

8Pinch off shape and let rise until double in size, 1 or 2 hours.

9Bake at 425° for about 10 to 12 minutes.
