- 5 lbs baking potatoes (about 10 large)
- 2 teaspoons salt
- 1 12 cups half-and-half or 1 12 cups milk
- 6 tablespoons butter
- 14 teaspoon black pepper
- 14 teaspoon ground nutmeg
- 12 cup fresh parsley, chopped
Directions

1Peel potatoes.

2Cut into 1 1/2 inch chunks, dropping into a large saucepan half filled with cold water.

3Add 1/2 teaspoon salt.

4Bring to boiling and boil, partially covered, until potatoes are tender, 15 minutes.

5Drain and set potatoes aside.

6In same saucepan, bring 1 cup milk and butter to simmering.

7Turn off heat.

8Return potatoes to pan.

9Add pepper, nutmeg, and remaining 1 1/2 teaspoons salt.

10Mash.

11Stir in parsley and remaining 1/2 cup milk.
