  • 5 lb russet baking potatoes
  • 2 or 3cups of heavy cream
  • 1 stick unsalted butter melted
  • pinch table salt and pepper

    Peel and chop potatoes into quartets.

    Cook covered in a small amount of boiling water for 20 minutes or until tender then drain.

    Add cream cream gradually, soo potatoes aren't too runny
  4. 4
    Put half the potatoes into a mixing bowl using a paddle attachment, beat potatoes on high speed until smooth and has no lumps, 1-2 minutes stopping mixer to scrape sides and bottom.

    SLOWLY add cream and butter with mixer on LOW.
