Ingredients

  • 1 cup plain flour
  • 1 tablespoon ghee or 1 tablespoon oil
  • salt
  • 2 -3 pinches bicarbonate of soda
  • 14 teaspoon ajwain
  • water, to knead
  • oil, to deep fry

Directions

    Mix all ingredients except oil for deep frying and water.

    Add water, little by little, kneading to a soft pliable dough.

    Cover.

    Keep for 15 minutes.

    Break into small portions.

    Roll into 1 inch rounds.

    Keep a little thicker than puris.

    Prick with a fork.

    Place on a clean spread out cloth.

    Do this for all the dough.

    Heat oil in a pan.

    Add some of the round balls (matri) at a time.

    Fry till slightly golden.

    Flip side, repeat.

    Drain excess oil.

    Allow to become crisp.

    Store in an airtight container.
