Ingredients
- 1 lb. beef (chuck or round, fat trimmed)
- 1/4 c. soy sauce
- 1/2 tsp. ground ginger
- 1 clove garlic
- 1/4 c. salad oil
- 1 c. green onion, sliced thin
- 1 c. red, yellow and/or green peppers
- 2 stalks celery, sliced thin
- 1 tsp. cornstarch
- 1 c. warm water
- 2 tomatoes, cut into wedges
Directions

1Cut beef across grain into thin strips.

2Combine soy sauce, garlic and ginger; add beef.

3Toss and set aside.

4Heat oil in large pan or wok.

5Add beef and toss over high heat until browned. Taste meat.

6If not tender, cover and simmer for 30 to 40 minutes over low heat.

7Turn heat up and add vegetables.

8Toss until crisp, 10 minutes.

9Mix cornstarch with water.

10Add to pan; stir and cook until thickened.

11Add tomatoes and heat through.

12Serve over rice.
