Ingredients

  • 1 doz. flour tortillas
  • 1 round steak, remove fat and cut into 1/2-inch strips
  • 1 c. whole green chilies, cut into strips
  • 1 large green pepper, cut into strips
  • 1 large onion, sliced
  • 1 garlic, minced
  • 1 large carrot, cut into thin strips
  • 1 c. diced canned or fresh tomatoes
  • 1 1/2 c. water
  • 1/4 tsp. cumin
  • salt and pepper to taste

Directions

    Fry meat strips in oil in a skillet over medium heat until browned.

    Add carrots, bell pepper, onion and garlic.

    Saute, then add tomatoes, green chilies, water and seasonings. Bring to a boil.

    Lower heat and cook until done. Warm tortillas.
