Ingredients

  • 3 lb. ground chuck
  • 1/4 lb. ground pork
  • 2 eggs, beaten
  • 1/4 c. bell peppers
  • 1/4 c. celery, chopped or minced
  • 3 Tbsp. poultry season or sage
  • 4 Tbsp. Worcestershire sauce
  • 1 Tbsp. thyme
  • 1 tsp. cayenne pepper
  • 1 bay leaf (optional)
  • 1 clove garlic, chopped or minced
  • 2 tsp. black pepper
  • dash of ground cumin (optional)
  • 12 crackers (crumbs)

Directions

    Mix all ingredients well.

    Shape in a loaf.

    Let set overnight or approximately 6 hours in refrigerator.

    Cook approximately 2 hours at 325°.

    Serve with a salsa sauce.
