- 2 lb. ground beef
- 5 slices bread, crumbled
- 3 eggs, beaten
- onion, chopped
- salt and pepper to taste
- 1/2 c. (about) water or milk
- 1 1/2 c. carrots, chopped
- 2 Tbsp. fat
- 1 1/2 c. celery, chopped
- 1/2 c. tomato juice
Directions

1Combine beef, bread, eggs, 1/2 cup onion, salt, pepper and water.

2Pat out on waxed paper about 1/2 inch thick.

3Combine 1/4 cup onion, carrots, fat and celery; spread over meat mixture.

4Roll jelly roll fashion.

5Place in roast pan.

6Pour tomato juice over top and sides; add enough water to keep from burning or sticking in pan.

7Bake 1 hour at 350°.
