- 4 to 6 eggs
- 4 to 8 oz. shredded Cheddar cheese
- ham or sausage
- green pepper (optional)
- tomatoes (optional)
- mushrooms (optional)
Directions

1Cook hash browns according to directions.

2Beat desired amount of eggs with 2 teaspoons water, then pour over potatoes.

3Cook eggs, turning 1 to 3 times.

4When eggs are done, put cheese on top.

5Cover pan to melt cheese.

6Cook in 12 x 14-inch skillet. Five eggs will serve 4 people, 4 to 6 ounce portions.
