- 5 lb. ground beef
- 2 c. chopped onions
- 1 c. chopped green peppers (2 medium)
- 9 c. (5 pt.) cooked or canned tomatoes
- 4 (6 oz.) cans (2 2/3 c.) tomato paste
- 2 Tbsp. brown sugar
- 2 Tbsp. minced parsley
- 1 1/2 Tbsp. salt
- 1 Tbsp. oregano
- 1/2 tsp. pepper
- 1/2 tsp. ginger
- 1/2 tsp. allspice
- 2 Tbsp. vinegar
- 1 pt. tomato juice
Directions

1Brown ground beef and onions.

2Add green peppers and cook slowly until tender.

3Add remaining ingredients.

4Simmer until thick enough for serving.

5Skim off excess fat before canning. Pour hot into jars, leaving 1-inch head space.

6Adjust caps. Process pints 1 hour and quarts for 1 hour and 15 minutes at 10 pounds pressure.
