Meat Stuffed Eggplant

Ingredients
- 1 eggplant
- 1/2 lb. ground meat (pork, turkey or beef, lean)
- 1/2 c. bread crumbs
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. green pepper, chopped
- 1 c. chopped celery
- 1 c. chopped onion
- 2 Tbsp. chopped garlic
- 1 (16 oz.) can whole tomatoes, quartered
Directions

1Cut top but don't peel eggplant; remove pulp leaving 1/2 inch shell.

2Parboil shell 3 minutes.

3Combine chopped pulp with meat, crumbs and seasonings.

4Stuff the eggplant with meat mixture. Replace top with toothpicks.

5Brown green pepper, celery, onion and garlic.

6Add tomatoes.

7Season and simmer for 15 minutes. Pour sauce over and around eggplant in baking dish.

8Bake at 350° in oven for 1 hour.
