- 1 lb. ground chuck
- 1/2 tsp. liquid smoke
- 1 pkg. corn shells
- 6 green onions, chopped
- 1 pkg. enchilada mix (McCormick)
- 1 can tomato paste
- 1 c. Monterey Jack cheese, grated
- 1 c. Cheddar cheese, grated
Directions

1Cook ground beef, then drain off the grease.

2Mix sauce with one cup of water and tomato paste and boil (on back of package). Put 1/2 cup of sauce on corn shells.

3Fill shells with about 2 tablespoons of meat, about 1 teaspoon of cheese and 1 teaspoon of onion.

4Roll with seam down.

5Place rolled shells in pan.

6Cover the shells with the remaining sauce.

7Top with 1/2 cup cheese and about 2 tablespoons of onions.

8Bake for 15 to 20 minutes at 350°.
