Ingredients

  • 1 1/2 lb. ground chuck
  • 1 tsp. salt
  • 1 clove garlic, minced
  • 3/4 c. red wine
  • 1 bay leaf
  • 1 c. cubed potatoes
  • 1 c. carrots
  • 1 c. celery
  • 3/4 c. bread crumbs
  • 1/2 tsp. pepper
  • 6 oz. tomato paste
  • 3 c. water
  • 1/2 tsp. oregano
  • 1/2 tsp. thyme

Directions

    Combine meat, crumbs, 1/4 cup milk, salt and pepper; make 1-inch meatballs.

    In large saucepan, combine garlic, paste, wine, water, bay leaf, oregano, thyme and meatballs.

    Bring to a boil; lower heat and simmer for 10 minutes.

    Add potatoes and carrots; simmer for 30 minutes.

    Add celery; simmer for 15 minutes. Sprinkle with 1 tablespoon parsley.
