  • 1/4 whole Red Onion, Grated
  • 1/2 cups Mayonnaise
  • 1 Tablespoon Dijon Mustard, Preferably Whole-grain
  • 8 slices Good-quality Sandwich Bread
  • 8 leaves Romaine Lettuce, Torn Into Large Pieces
  • 2 whole Tomatoes, Thinly Sliced And Lightly Salted
  • 8 ounces, weight Smoked Mozzarella, Thinly Sliced
  • 1/2 cups Crumbled Plain Pita Chips

Directions

    Mix the onion, mayonnaise, and mustard in a bowl.

    Spread a portion of the mayonnaise mixture on each piece of toast and top with lettuce.
