- 1 large eggplant, sliced
- 1 c. chopped onion
- 2 garlic cloves, minced
- 1/4 c. margarine
- 1 (15 1/2 oz.) jar spaghetti sauce
- 1 1/2 tsp. Italian seasoning
- 8 oz. lasagne noodles, cooked and drained
- 1 c. cottage cheese
- 1 (8 oz.) pkg. Mozzarella cheese
- 1/2 c. grated Parmesan cheese
Directions

1Preheat oven to 375°.

2Saute eggplant and garlic in margarine. Add spaghetti sauce and seasonings.

3Bring to a boil; reduce heat.

4Cover and simmer 10 minutes.

5Layer half of noodles, sauce, cottage cheese, Mozzarella cheese and Parmesan cheese in a 12 x 8-inch baking dish.

6Repeat layers.

7Bake 30 minutes.

8Let stand 10 minutes before serving.
